Yep, I've done it that exact way. Usually I hit 40 psi for 24 hours then back it down to serving, as 30 for 24 hours in my experience will undershoot. But 30 for 48 hours will overshoot, so depending on your schedule you can find some sort of middle ground and/or check it in between to get it right.

Yeah, I can manage some of those, depending on schedule of course.
The Left Coast in Irvine is quite nice. I'm a bit of a BBQ snob, and I was very pleased with the quality of their BBQ. And of course the beer is good.

I personally haven't worried about it. Usually what I've done is to loosen the tri-clamp fitting on the top of the sanke when I cold crash. I know it pulls in a little O2, but not a lot, and there's a nice blanket of CO2 sitting there. I don't think setting your regulator to 1-2 psi is a good idea. ...

Been there twice now. First time it was before they had any of their own stuff on tap. Had some guest beers, some food, etc. Pretty cool place.
