Using air and a pump it is almost impossible to over aerate However, when using pure O2, it can be overdone causing issues later on When brewing 11 gallons, I set flow regulator to .5 L/min then run for 2 minutes. At end of two minutes, shut the valve off and let system bleed down If you are brewing...

The chloride/sulfate ratio is on the high side This will result in a very malty beer Also the mash pH is a little high I usually aim for 5.41-5.42 :happybeer: I am going for a malty beer so I was leaning heavier on the Cl- than SO4-, but I am really not sure how far to push it in the Cl- direction....

Suggest installing a shut off valve ahead of regulator
Also the brew stand should be secured with length of chain a little shorter than the hose
This will prevent the stand from pulling the hose apart

Dark Lord Imperial Stout
Has anyone read this months BYO article on Dark Lord Imperial Stout? This is one huge beer at 15% ABV and 100 IBU Pours like 10w-30 motor oil I am going to brew this in January if weather permits Any comments or input would be appreciated...if you want to stop by and watch the kettle boil for 4 hour...

Edit: nevermind, I see in your first post you said "at mash temp". When you see the recommended pH ranges that is at room temperature. As the temp rises, pH drops, so you're probably in the ballpark pH-wise.

What was time period between adjusting pH and retesting?
The pH may have adjusted but you checked too soon after adjusting
I have found that stabilizing may take up to 15 min
