Whats the advantage to having 3 rollers vs 2?

I am looking at purchasing a grain mill and wanted to get some recommendations and feedback on what to consider.
I will be sharing it with my brother in law and between us (mostly him) it will be going thru 2-4 batches per month, so it will be getting a lot of use. What say you?

How do you know that the capacitor has gone south?

you should be able to test it with a electrical meter
