These are renowned for bad joints leaking down refrigerant. I just repaired a 180 bottle version of the same thing. You can clamp a saddle tap to the low side and add R134a (should be R134a anyway) and it'll come back to life. Takes a good while to bleed back down again.

Re: CO2
I used to get gas from California Tool and Welding. They would fill you bottles so no swap. They used to have a location in Riverside, not sure if they're still there.

Re: Honey Beer
While I have not used honey malt, I hear reports that 'a little goes a long way'. Maybe jward can give you a hint on a good ratio..
I used it like crystal malt. You probably only want 1/2 to 1 pound for 5 gallons. Derrin uses it in Bee's Butt and may have something to add.

Re: Newport Beach Brewing Co
FWIW: They were recently bought out by owners of several other long-time peninsula service establishment owners. Their goal is to breathe some new life into the place via making some much needed and neglected repairs and then get back to focusing on brewing great beer there. Sounds like they're ...

I think it's great! It'll be a good start. Last time we tried something like this we debated it to its literal death.

If I were considering a spiced beer, especially something with such a strong herb like sage, the first person I'd reach out to is LexusChris.
