I have an oatmeal stout that came out more like a sweet stout. Half is on vanilla bean an cocoa nibs. I have some barrel aged barley wine on tap too. I will probably bottle it all. I have been itching to brew both Red ale and american hefe/wheat.

I will brewing oatmeal stout, the recipe in the John/Jamil Styles book. I have been thinking of splitting into separate 5 gallon batches to hit one with cocoa nibs and maybe vanilla beans.
Have you used cocoa nibs? Any suggestions of how to do so properly and how much to use?

It seemed like OC makes you pay for both the ticket and traffic school. So, it might be cheaper to pay the ticket and be done with it. If your insurance will screw you for one ticket then one every 13 years might be to often.

Pete/Oskaar always suggested cubes to me for mead. The slower, more linear absorption of the cubes can help with repeat ability (re-oakability?) too. That is, once you figure out how much time is required for that perfect taste it should be easier and less work to hit again.

One cool design I saw set it up so the collar was hinged and raised taking most of beer and co2 lines out of the way with it.

I don't like the charge for lesson thing either and am happy Eric has not charged that I know of. I have suggested that he have some kits of the demo recipe ready for sale. See it brewed, go make it yourself.

When I looked into distilling it seemed like is still technically illegal to increase alcohol content this way, not that anyone will ever go after you for doing it.
