I'll put out an idea... When you raise the temperature of the closed keg the pressure of the CO2 in the head space will rise. This higher pressure will allow more CO2 to absorb in the beer. I think 208 is probably sufficient, water boils at 203 in Denver and they seem to be able to make good beer there I was wondering if 208 would be OK. I used BMBs Oktoberfest recipe for an Oktoberfest ale. The beer smith estimated OG was 1.055. I hit 1.054. I fermented with WLP029. The FG ended up at nearly 1.010 a bit low with estimated FG of 1.014. It seems to still have some good malty Oktoberfest flavor. Can't wait to see how it reads cold and...
