Your main concern should be to make sure that you reduce all the diacetyl with a warm rest before your take it down to lagering temps... Here we go again. Depending the yeast strain, your pitching rate, and your pitching temp, you may not need a diacetyl rest. If you pitched plenty of healthy yeast...

Ok Dan, I sampled mine last night and it's not something I would want to enter, so please send yours in. Brad, brewing is great fun, but I wouldn't rate it over sex. Do you blame him? Sex is better than brewing, but having your wife get pregnant every time you have sex does not sound like much fun.

Just started a new job and have been working like a dog. I wanted to brew last Sunday, but got rained out. What a paradox - I have more grain and hops than ever, but no time to brew! Plus I got another baby (boy!) coming in June so I really got to get off my ass here and get some beers in the tank!...

Does anyone else want to step up to the plate on this one? It sounds like Dan is ready to kick some ass. I don't have any porters ready right now. My point is, if Dan is the only one with a beer ready for this comp, we should just have him send it in rather than go through all the trouble of having ...

The 5th or the 12th both work for me. Hopefully, I will have my 10 gallon system up and running by then.

Hey Mike, We will be having our next club brew day in April, we can plan a joint Brewcommune/TVHA for that. We haven't set a date yet, so let's see what will work for both clubs as far as dates and a location. We can use my house if needed. I live in Corona, so it is an easy drive for most everybody...

Morewinemaking.com has them listed here - http://morewinemaking.com/view_product/19676/103207

Hopefully Lars can find out if they carry them in Riverside.

If they don't have them, you might consider one of these.

Thanks for posting the pics Lars. I am looking for some casters for my Brutus now. What did you use and how did you mount them?

The secret is probably in your longer primary, Brad. My understanding is that the yeast will clean up the diacetyl at the lower temperature, they just do it faster at higher temps. I'm lazy, so I'd probably follow Brad's model. :) What are you trying to say Brent? The method I use requires le...

If you pitched at 48 and had plenty of yeast, you may not need a d-rest. It also depends on the yeast strain, but I have never done a d-rest (I pitch cold with plenty of yeast) and I have never been told that my lagers have diacetyl and most of my contest awards have been from lagers. I generally ju...

SSSSHHHHHhhhhhhhhhh.......... One of the Beer Gun's secrets is the use of about 10+ feet of 3/16" beer line. This allows you to run the keg at well below serving pressure but at a higher pressure than you would have to otherwise. The idea being when you dramatically drop the pressure to fill f...
