I haven't been to Ouray, Durango, or Silverton since I was in high school. Beautiful country but none of those breweries existed back then.

Not sure if Saison is the best choice for this yeast since it is so clean. Saison is a very yeast driven style.

I use a Rolodex and the recipes are written by hand and sorted according to the specific gravity.

I've tried a couple beers from breweries that used that yeast. They were clean. According to what the brewers said, it finished really fast and they just the temp rise naturally with no temp control (some got to over 90F).
I, however, am still skeptical and I have not used it myself yet.
