You can have the temperature displayed on the front, you just need to pick up one of the I2C displays and wire it up. Just make sure you ground that to common too!

I'm interested in setting up some float switches on my system too. I don't really want to drill holes in my kettles to take them though, at least not until I've been able to try it out and see how it plays with the automation.

Looks good to me, I'd probably do some Nugget at 60 minutes, maybe the WIllamette at 10-15 minutes and the Citra and Simcoe at flameout with a 20-30 minute whirlpool. You've got a lot of good options with the hops you've got on hand, I don't think you can go wrong.

I've been using a drill for 6-7 years and I haven't ever felt the need to motorize. It's a bit annoying to sit there holding the drill while you're milling, but really not a big deal.

I also usually cold crash before adding the hops for a day or so, but I don't think that is absolutely necessary. Not sure why it'd be necessary before hopping, unless you're worried that the yeast will "stick" to the hops... Either way, I leave it at fermentation temp during dry-hopping,...

I target a 60 minute sparge for my 10 gallon batches. I will direct fire the mash tun if the wort is recirculating, but I don't do it during the sparge. I tasted the Kolsch that was on top of the yeast you gave me, it was really nice given that it wasn't carbonated and probably a bit oxidized. I'd bet that the final beer is really tasty.
