Thanks Brad! On the gravities, I got: OG: 1.061 FG: 1.008 ... BeerSmith estimates OG:1.062 and FG:1.014. Would my lower than expected FG indicate I did not mash at 154 as BeerSmith predicts... ? Bottled this one last night. Tasting out of the bucket was very good! Some nice maltiness coming through the hops. I'm very optimistic on this one, and looking forward to tasting it again in 4 weeks or so! Color & clarity was real nice too! (FG=1.013)

On a more practical note, this is a very dangerous way to go with mead especially since a sparkling mead will generally clock in at 6 ATM and can explode those bottles into little glass sliver grenades. Had some *fun* tonight with an older bottle of mead I made last year. I like them sparkling, so I typically bottle them with some fermentation left to go. One thing that made my life easier with the chiller was attaching a valve to the end of the hose that connects to the chiller. That way I can adjust the flow rate and shut off the water right at the chiller. An excellent idea and I picked up a plastic one at Lowes the day before AG#2 brewday! Here ...
