Where is your back up package of yeast?

It sounds like the beer is "hot" which could mellow out over time. Higher than 1.080 gravity beers are a whole different ball of wax. Aeration is necessary for healthy yeast when brewing at that gravity. I ordered some aeration equipment, but it is on backorder

You'll be happy to know that I now have large grocery paper bags for holding grain. I still have 2 sizes of the smaller plastic bags. You are also welcome to bring in your own containers if that suits you.
