HELLO Everyone got a question

wanted to say HI to the club, I'm the new guy......

I'm new to home brewing, started Nov '09 and am working on my 3rd batch, and had a question. When moving the beer from the fermenter to a keg do I want to let it age in the fridge under co2 or wait to add co2 when ready to start drinking?

Also was hoping to join you for the march meeting has there been any decision on meeting place, time, and day?

Welcome! This month we will meet at Oggies in Tustin. There is a new thread with details and poll for a head count. Normally those get posted 2 weeks ahead and I most of the time that will happen. We needed to wait for approval to bring home brew.

To your question. I CO2 early and often. That is I purge the keg with a bit of CO2 before I fill it with beer. Purge the head space with CO2 after filling and closing the lid. Lastly I push 30 psi and top off for a few days as it adsorbs the CO2 to the desired level of 10-12 psi for my system and most of my beers. Some time in the not too distant future I'll just push 30psi initially to seal the lid and then just keep it at the 10-12 psi serving pressure until it fully carbonates.

Welcome to the boards Brian!

I do as jward does... put it on CO2 right away... and at high PSI and in the fridge for at least the first few days. It takes that time to absorb into solution.

I just gas it if it's in the kegerator. If it's inthe storage fridge, I purge it.

HI Brian: Welcome as well.

About the only time I don't put CO2 on immediately is for lagers ... I let lagers sit for 4-5 weeks in the fermenter before adding CO2. Other than that, once it is in the keg, 25-30PSI immediately just like the others.
