Hey All!
July's club meeting will be Tuesday, July 20th, 2010 @ 7pm. OC Eric has again graciously offered to host our meeting at his new homebrew supply store:

The store has the space, but not the chairs neccessary. So please bring your own folding or lawn chair, plus an extra chair to share if you can. Last time we had just enough to seat everyone.
Please bring your homebrew, mead & ciders to pass around & talk about. Posting your brew's recipe in the club database is a great way for everyone to remember your creation, and match ingredients & techniques to real-world tastings. This is also a great place to ask questions, and solicit advice about your beer.
We'll also have Brewmaster Brad's style presentation & competition updates, and hopefully a Blichmann Beer-Gun demonstration (if I can extract my CO2 canister from it's happy home in the kegerator).

I will be there. I am leaning toward Witbier as the style since I will have my homebrew version to compare to commercial examples and it is a great summertime brew.

Guys-
The Costco by AHP doesn't have the non-crystal clear plastic cups anymore. Anyone knwo where to get the "regular" clear plastic cups? Obviously this means I won't have them for the meeting. I do have the BIG red cups.

The style presentation tonight will be on Witbier.
I have uploaded some reading material that I don't want to print since that would kill too many trees.
White Beers from the Treasury of Beer Styles in the 1991 Zymurgy Special Issue.
Witbier from volume 2 number 4 issue of Brewing Techniques.
The chapter on White Beers from Michael Jackson's Great Beers of Belgium. The quality on this scan is poor, somewhat on purpose, so that you will want to go out and buy your own copy.
There will be two prizes tonight for properly answering Witbier trivia questions from the reading material. The first prize is a bottle of Orchard White from The Bruery (from my own personal stash of mislabeled Bruery bottles). The other prize is a pitch of WLP400 Belgian Wit yeast. This yeast was harvested from my attempt at brewing a Witbier which you will alll taste tonight.

Good meeting guys. I learned a couple of things:
1. Pilsner malt should be boiled for 90 minutes - though I can't remember why ???
2. Pilsner malt should be brought to 140 FAST and then the kettle can be covered - Something about removing SMS and DMS.
3. Coriander and orange peel is a great combo
4. Tim's ingenious washing sanitizing systems kicks ass! Find a way to make it pretty and I bet you could sell it.
5. Brent looks good in a AHP T shirt
BTW, someone (BARL brewing I think) left a collapsable chair behind.

Kevin, you and someone else have kegs (from Brad) waiting for you at the shop.

Here's the deal on Pilsner malt and DMS: S-methyl methionine (SMM) is produced in malt during germination in the malting process. Pilsner malt has about 5 times as much SMM as pale malt. When heated, SMM breaks down into dimethyl sulfide (DMS). DMS can give beer a cooked corn or vegetal character. In some lagers, some DMS is expected and is actually part of the flavor profile. In other beers, it is considered a flaw. DMS is driven out of the wort by the boil, so the longer you boil, the more DMS is driven off. After flameout, SMM is still being converted to DMS until the wort reaches about 140F. That's why it is important to cool the wort quickly, especially when brewing with Pilsner malt.
I have just got in the habit of boiling all my beers for 90 minutes since I brew so many lagers. 90 minutes is enough time to drive off most of the DMS and not so long that you develop too many melanoidins.
