Aging a keg
If I were to age a beer in the keg for an extended period of time, would it be best to just purge the headspace with co2 or age with the beer saturated with the desired volumes of co2?

I just purged the head space with CO2 on my RIS. I hit it with 30PSI and i occasionally burp the keg every few weeks. This is just to get out some of the CO2 that the yeast might still be putting out. If i hear a leak in the seal, i just hit it again with the bottle to get a proper seal again. I draft a little out every month, and see how the carbonation is coming, then i just adjust from there. So far so good for me.
