Devon White Ale

My wife wants to brew the Devon White Ale from Mosher's Radical Brewing p. 246. Here's the recipe

Yield: 1 Gallon

4.0 lbs. Pilsner Malt
3.0 oz. wheat flour
.5 egg white
.2 oz. kosher salt
.25 oz. coriander
.25 tsp powdered ginger
.12 tsp caraway
Use Bread Yeast.

Different to say the least. This is a low gravity brew. While the ingredients are listed, there are basicly no directions to follow. We were thinking of using WL001 instead of bread yeast. What I am getting from the book is that the malt is mashed and lautered. Then the other ingredients are added and the wort sits for 12 hours and then put in a cask. No boil? Does anyone possibly have any other knowledge that might be helpful in making this strange ale?

Wow, this sounds like a pretty strange beer. Devon White Ale, aka West Country White Ale.

They give all the instructions there. No hops, no boil, and according to the article, the egg whites and flour are used instead of yeast to ferment.
