just had my perker simi-explode after brewing a big porter. so much foam blocked the top perker till the pressure built and the whole top blew off! think I was able to save the beer - took some out and tasted OK. but any suggestions to not have this happen again would be nice

The answer is a blowoff tube...

Essentially you need some way for the krausen to exit without building up pressure. So rather than a little tiny airlock you create a really big airlock. With the end of the tube put into sanitizing solution, you've got a system where CO2 can get out, but air can't get in.
