This just in: because the owners don't like their customers, OR their customers' money, they have taken tri tip off the menu. It was the best thing on there and so now I'm going to get their email address and complain. I'll post it for everyone and we can all write angry letters.

I will definitely cold age it, you basically described my problem to a T. Also, I think I may have gone a little overboard with the yeast nutrient and aeration so it's a little more green than I had anticipated. You used 320 but I think I was using 330-- the Bavarian-- but I'm sure it'll turn out th...
