Experiment - Tustin Terroir (Terror?)

Post by brahn »

I was brewing up some altbier on Sunday and decided on a whim to take a quart or so of the last runnings and boil it up with a couple cascade pellets for about 15 minutes. Then I took the pot outside and let it cool in the breeze for a few hours before measuring the gravity and sealing it up in an erlenmeyer flask. When I got home from work today there were a few clusters of bubbles and now there's a solid layer over the top.

Most likely I've made a 5-600ml abomination, but on the off chance that it tastes decent this could turn out to be a fun little experiment.

Has anyone else tried something like this (intentionally or not)? How did it turn out?

I have not personally but had a few customers who did. The general consensus between anyone that I spoke with about it was that the butyric properties of the final product was a bit much and the LA/OC basin would never be known for their spontaneous fermentations.

I'm familiar with the butyric smell... Thankfully not from any of my beer.

If it's that bad you could always give bottles to the Sea Shepherds to throw at the Japanese whaling fleet. :)

Butyric is about the worst case scenario... I hope it doesn't come to that. It smells pretty good so far, it looks like the primary is about done but I'm going to give it some more time to see if there's anything else in there that was just waiting for a lower pH or less oxygen.
